The Green Kitchen is back in its third season – with its first episode on India’s favourite natural sweetener prepared from sugarcane. Gur is becoming popular as a healthier alternative to sugar – when it is prepared easily enough using a traditional method without using harmful chemicals to enhance its appearance.
Vibha Varshney travels to the sugarcane fields of Muzaffarnagar in Uttar Pradesh and the narrow winding lanes of Chandni Chowk in Delhi to explain the link sugarcane jaggery has with nature, nutrition and livelihood.
